We're avid schnitty fans. And these easy curried schnitty's from delicious.com.au are a real treat. Serve with a salad and some chippies for an instant crowd pleaser. Side note - make it even easier with a cheeky drive through run for your favourite chippies. We don't judge!
Ingredients:
2/3 cup (100g) plain flour
1½ tbs mild curry powder
1 tsp ground turmeric
3 eggs, lightly beaten
250g fresh breadcrumbs
4 chicken breast fillets sliced into desired schnitty size
Sunflower oil, for shallow-frying
1 cup (280g) Greek yoghurt
1 tsp ground cumin
Juice of ½ lemon, plus extra wedges to serve
How to make them:
Get prepped. Line up 3 bowls, in the first add the flour, curry powder, tumeric, give it a good mix. In the second add the eggs. And in the third add the breadcrumbs with a pinch of salt, give it a good mix too.
Grab a piece of chicken, give it a good covering of the spiced flour, then dip it in the eggs making sure you've covered the whole piece, then coat it with the bread crumbs, gently pressing so the crumbs with stick, place on a plate. Repeat this step with all the chicken pieces.
Heat oil in a large, deep frying pan over medium-high heat. Add schnitzels (you may need to do this in 2 batches) and cook for 5-7 minutes on each side until crisp and golden.
Combine yoghurt in a bowl with cumin, lemon juice and salt and pepper. Serve schnitzels with the cumin yoghurt, lemon wedges and chippies!
